In my relatively brief journey, I’ve learned that some plant-based folks believe that tofu is God’s gift…while other’s think of it as the Devil’s spawn.  I like to use tofu as long as it’s non-GMO, and I try to buy organic when possible.  When those criteria are met, I use tofu whenever I feel like it!
